INGREDIENTS

  • 1 tube of sugar cookie dough
  • 1 package of cream cheese (at room temperature)
  • fruit jam (I prefer peach or apricot) 
  • Fruit: strawberries, blueberries, peaches, apples, mandarin orange slices, grapes
  • 1/3 cup powdered sugar
  • warm water

Preheat the oven to 350 degrees. On a cookie sheet or pizza pan, use your fingers to evenly form a round pizza crust, using the cookie dough. (You can also make a rectangle pizza to slice in squares.)

Bake the cookie crust for 20 minutes or until done. Cool completely. Next, you will need to make your “pizza sauce.” Mix cream cheese, 1/3 cup powered sugar and 1/3 cup jam in a bowl. You can use a fork or an electric mixer. Just make sure it’s blended very well. Using a spatula, evenly spread the frosting-sauce over the cookie crust.

recipetemplate12Next, arrange your fruit toppings. Cut all your fruit into thin slices. (Not the mandarin oranges or blueberries, though). You can use any combination of fruit that you like, but be sure to make it colorful! Once all your fruit is arranged, you need to make a fruit glaze. Take 1/2 cup  jam and mix it with 1/2 cup warm water. Then, drizzle this over the fruit topping. This will help “seal” the fruit so it won’t turn brown before you serve it.

Refrigerate the pizza until you are ready to serve. Then, slice and enjoy!
